If you enjoy eating steak then you know the way(s) you like it prepared. While some people prefer their steak rare others like it very well done. There is always the compromise of medium rare. Rare is usually still pretty raw. If it is referred to as medium rare the steak will have a fully red color inside and is cooked at about 130 F. Well done steaks are cooked at about 160 F making the meat appear slightly charred and gray-brown throughout. Shorter cooking times retain more juice in the meat. Longer steak cooking times result in a drier tougher meat.
